Hey check it out guys,
I’m one of those guys that think Chipotle is one of the most amazing things to have blessed this Earth (except that time when they had the E. coli outbreak, that wasn’t really amazing). Every now and then, I go out and get their sofritas burrito bowl for veggie day, and I liked it so much, I decided to give it a shot making it myself:
INGREDIENTS:
-3 chipotle peppers
-3 tablespoons adobo sauce
-2 tablespoons olive oil
-1 cup H2O
-1 tablespoon cumin
-1 tablespoon sugar
-juice from 1 lemon
-1 roasted poblano pepper
-2 tsp tomato paste
-2 cloves of minced garlic
-1 package of firm tofu
-salt to taste
PROCEDURE:
- Roast poblano pepper until it is charred. Remove seeds from pepper
- Add chipotle and poblano pepper, adobo sauce, garlic, cumin powder, tomato paste, lemon, olive oil, water, sugar, salt to a blender. Mix well
- Cut tofu into smaller squares. Lightly fry each side of tofu. Pat the tofu to get rid of excess oil or water. Chop into smaller pieces
- Add chipotle mixture to a pan and saute with constant stirring until mixture starts bubbling
- Add tofu to the sauce and allow mixture to boil off some water. Allow sofritas to simmer afterwards
